I love this recipe!! Naturally sweetened, high in protein, and perfect for my toddler boys. I love quadrupling this recipe, putting it in a oiled 9×9 baking dish, and baking it for 25 minutes at 375. Today I added orange zest, half of a orange, and topped it with cranberries and walnuts!! Yum!

I haven’t tried it! You’ll likely have to reduce the oats to account for more dry ingredients.

If the batter is overly thick you can add a bit more liquid to help it loosen up! Otherwise, yes, feel free to double!

Just made these and they were delicious! My only issue was the very thick batter that I had to scrape out of the blender. It only made 3 small/medium pancakes. I was tempted to loosen it with some almond milk but decided not to on the first try. I would definitely double the recipe if feeding more than one person!

For those of us who enjoy gluten-free, low-sugar, high-protein recipes, these pancakes were a great find! I added some small frozen blueberries after mixing the batter in the blender, and they defrosted/cooked just fine during the griddle-cooking process. The blueberries helped give them a little more natural sweetness since I was using a sugar-free syrup. I do recommend adding either chocolate chips or blueberries to give these pancakes a fun flavor.

Cooking on the griddle at about 250 degrees worked for my griddle; three-hundred degrees turned out to be too high and made them a tad too dark, but every griddle heats up differently, of course. They fluffed up just fine. I didn’t see many bubbles in the middle of the pancakes like you’d normally see in traditional pancakes–maybe just a couple toward the edge–so I just kept checking the bottom to tell when to flip.

Just note that these pancakes might be too “healthy-tasting” for the average person who isn’t used to low-sugar, gluten free recipes. As far as appearance, they’re on the darker side.

Hi! Adding more cottage cheese will add too much liquid I’m afraid. You could experiment with increasing the oats if you do add more cottage cheese, or replacing some of the oats with protein powder. Let me know if you try it!
