One of my favorite banana breads, especially for kids! I saw Monique sub 3/4 of the whole wheat white flour for 1/2 cup oat flour and 3 tablespoons flax meal and it’s the only way I do it now!

So strange! I’d love to help troubleshoot for you. Were your bananas SUPER ripe? And did you measure the flour using the spoon-and-level method to ensure that it wasn’t packed? Were you sure to not overmix the batter? That can also create a dense texture.

I always do both because lining it helps you remove the bread easily, and then greasing it helps easily remove the parchment paper. You can likely get away with just doing one but I like to double up to be sure there’s no sticking!

So strange! It sounds like the batter may have been over-mixed, which can create a dense, “gummy” texture. You can absolutely blend the wet ingredients by hand, but be sure to mix the dry ingredients in with the wet until JUST combined.

I was really excited for this recipe, I followed the recipe exactly using the suggested alternative of 1c whole wheat flour, and 3/4 c all purpose flour. I used three bananas, super ripe. I made into muffins. They are very dense and slightly spongy ! Any thoughts what would cause this?
I did blend the wet instead of mixing by hand, but that was noted as a possibly in the recipe.

Everyone loves it. I use both walnuts and chips; also coconut oil (and I double vanilla in all recipes). TAKE IT TO THE NEXT LEVEL by sprinkling the top with a little coarse kosher salt before baking!
